No pics today. Very busy weekend. Just thought I would let all know that little Joey has a broken collar bone--from delivery. They have to keep his sleeve pinned up some how. Being as young as he is I know that he will heal quickly, Otherwise he is a healthy baby and mom and baby are home and doing fine. Thank you all for your comments and prayers etc. Have not gotten any knitting done since the birth. Worked yesterday--wasn't a particularly fun day at work--but I still like my job. They pay us to work, not have fun::snort:: Had teeth cleaned this morning. Yay!! And am going to make a lasagna casserole to take to my daughter's on Thursday Here is the recipe. It is easy, delicious, and feezes well and microwaves well.
Lasagna Casserole
1 pound ground beef
¼ cup chopped onion
½ tsp. Salt
½ tsp. Pepper
1 pound medium shell pasta. Cooked and drained
1 pound (4 cups) shredded mozzarella cheese, divided
1 carton (24 oz.) small-curd cottage cheese
2 eggs, beaten
1/3 cup grated parmesan cheese
2 tbsp. Dried parsley flakes
1 jar (26 oz.) spaghetti sauce.
In a skillet, cook beef and onion until meat is no longer pink and onion is tender; drain. Sprinkle with salt and ¼ tsp. Pepper; set aside. In a large bowl combine pasta, 3 cups mozzarella cheese, cottage cheese, eggs, parmesan cheese, parsley flakes and remaining pepper; stir gently. Pour into a greased 13” x 9” x 2” or shallow 3-qt. Baking dish. Top with the beef mixture, then the spaghetti sauce, and the remaining cheese, (dish will be full.) Cover and bake at 350 degrees for 45 minutes Bake uncovered 15 minutes longer or until the cheese is melted and bubbly. Let stand 10 minutes before serving. Yield 6-8 servings.
I use more hamburger, mozarella cheese, and sauce than recipe calls for.
