Yummy Yummy

I am going to my daughter's Wed.--my baby daughter who is 34. LOL. My middle daughter and I are gonna baby sit the baby so she can do her term paper at the library. Can't wait. Anyhoo, last night I dreamed about this dish all night long--so guess what I am Making it to take Wed. for lunch. My husband doesn't care for sour cream or cheese so I can't wait to eat it. It is delicious. I got the recipe from my oldest daughter and it is a family favorite among us girls. It is called Creamy Chicken and Rice. I am not sure where she got the recipe, but enjoy.It takes me about an hour to put it together but is well worth it.

Creamy Chicken and Rice
4 c. cooked rice
1/2 cup butter or margarine, divided
1/4 c. flour
2 c. milk
2 teas. chicken bouillon granules
1/2 to 1 teas season salt
1/2 teas garlic powder
1/4 teas pepper
4 to 5 cups cubed cooked chicken
12 ounces process American cheese, cubed
2 c. (16 oz.) sour cream
1 1/4 c. crushed butter-flavored crackers (about 32)
Spread rice into a greased 9x13 baking dish; set aside. In a saucepan, melt 1/4 c. butter; stir in flour until smooth. Gradually add milk, bouillon, season salt, garlic powder and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Reduce heat; add chicken, cheese and sour cream; stir until the cheese is melted. Pour over rice. Melt the remaining butter; toss with cracker crumbs. Sprinkle over casserole. Bake, uncovered, at 425 for 10-15 minutes or until heated through.

Baptism

Baby Joey baptized in the Catholic Faith today. Pics of Mom, Dad, and Brothers and Sister. It was a great day. Had a wedding feast for lunch!! Congratulations!

Someday this blog will revert to knitting again--instead of a Baby Joey Blog--when I have more time to do it. Have finished a coupla pairs of socks but since they are gifts they will not be posted till much later. I have also gotten the wrap sweater that I am working on for my 5 year old grandaughter about half done. There are lots of sweaters that I selfishly want to make for myself after Christmas--but too too busy right now.

Bought a new prelighted Christmas tree and it is up awaiting decorations. Maybe later in the week. I am usually done with all my Christmas shopping by now and I haven't even started yet. Getting more and more like my husband in my old age. It has been a really hectic couple of months with new baby, my back injury, husband's knee surgery etc. Hopefully things will calm down soon. I know that it can always be worse. Am now getting over a nasty head cold--so didn't hold the baby today--but Wed. my middle daughter and I are babysitting so Andi can finish a term paper for school. She said she is going to take next semester off. Now remembers how much work a new baby is. Well Happy Knitting To All.

Country Living

Last night when I came home about 10:00 PM there were 4 deer off the the side of our driveway--and they just stood there watching me. Gotta love country living. Of course in NE Ohio the deer are also overpopulating our urban areas also. They are defintely magnificent animals. Just another thing to be grateful for, that I can enjoy all the things around me. Happy Thanksgiving

Thanksgiving

Thanksgiving is almost upon us. And, as always there is a lot to be grateful for. My husband had outpatient knee surgery today to repair a torn meniscus--they also removed some floating cartiledge. Not sure I spelled that one right and I'm a nurse. Ahh well--ortho is not what I do. I do mentally retarded and developmentally delayed children and have for the last 15 years. Sorta lost track of the other stuff. He has to do nothing but keep it elevated for the next 2 days with ice--he is allowed to weight bear and walk to the bathroon--kitchen--bed etc--only when necessary. He said even with the pain from the surgery--it feels better than it did--and that is a lot to be grateful for. We have a brand new healthy grandson to be grateful for--in fact between the 2 of us we have 12 healthy grandchildren to be grateful for. I have Mom who is healthier than I am and she is 82 and will be here for Thanskgiving. She is spending the night Wed. I am sure we will have a great visit. My husband's daughter will be here for Thanksgiving. I will be cooking--not what we originally had planned--but due to the surgery will be unable to travel to the restaurant we were going to. I am grateful I can cook. I am grateful I no longer work full time and don't have to work. I have worked a lot of Thanksgivings in the past. Life is good--and even when it isn't I can always find something to be grateful for. We spent Sunday and Monday at a funeral home and cemetery. A really good friend of ours lost her Husband on Wed. Came home from work and found him dead. Thank goodness she has a large loving family to support her. I am sure it will be a tough holiday for her--keep her in your prayers. Happy Tnaksgiving to all. Sorry no pics. Hope to once again be knitting next week.

Precious Moments

Here he is. Healthy as can be, and we love him so much. I got to see all my children and my Mom yesterday and it was a great day. I can't believe Thanksgiving is next week. My husband is having knee surgery to repair a torn meniscus next Tuesday, so it changed our plans a bit--but no big deal. We have a whole lot to be grateful for. We found out that one of our friends lost her husband on Wed. night so will be busy the weekend. Calling hours Sunday and Funeral Monday. Kinda puts life in perspective about what's important and what isn't. Haven't done much knitting or crocheting. I am sure it will pick back up soon. Gotta go clean now. Happy knitting to all.

Knitting Socks

Well--now that the cascade socks are finished I have another pair half done. Much faster when you like what you are knitting. No pics as they will be a surprise for someone--pics will follow after Christmas. Still having back and leg pain--but am going to try and work today. I am sure that by 11:30 tonight I will be sorry I did this--but who knows--maybe it will help. I do have a Dr.'s appt. Tuesday--so maybe we can find the cause of this. I have been considering a chiropractor, but figure I better make sure of the extent of the injury first. I am not a great believer in chiropractors due to the stretching they do and wonder if this is good in the long term. My step daughter uses one regularly. Well we had a big surprise party for my husband last night at an amish restaurant. My stepdaughter planned it all and did a great job. It was great. He didn't have a clue. Just thought his daughter was taking him out to dinner like she does every year. He was absolutely dumbfounded!!! As I said it was great--a real hoot!!!!! It isn't everyday you turn 70. Well gotta run and get ready for work. Happy knitting to all.

Cascade Fixation Socks

Well the Fixation Socks are finally done!!!!Yay!!!! My Aunt Edna will get her sox for Christmas after all!!!!! In Answer to your question Eileen I guess the reason that I did not enjoy knitting with this yarn--I don't like the feel of it for sox or the stretchiness-I just found it difficult for me to work with. I have not been on the computer much due to back and leg pain. Have missed 2 days of work due to the pain--not like me. Not complaining though--just stating facts. I have learned to be grateful for what I have in spite of the bad things in life. You can check this out on Mandy's blog. I love her blog. She has a great outlook on life. Cascade Fixation Socks

Finally, I have these socks almost finished. I have to do the toe decreases, graft the toe and the second sock will be done. I have not enjoyed working with this yarn!!! I hope my aunt will like her Christmas present. Am itching to start a new project that I will enjoy. Happy Knitting.

Happy Birthday

Today is my husband's 70th birthday. Big one for him. I am 12 years behind him--70 seems pretty young right now. I can remember when I thought 30 was old!! Happy Birthday Dave!!!

Cascade Fixation Socks

One down and one to go. Actually, the second sock is about half done. I am making these for my aunt who is allergic to wool-acrylic-etc. I don't particularly like working with this yarn and was going to abandon these socks and make her a cotton scarf--but decided to finish them after all. Everyone does need at least one pair of hand knit socks, right??? I sprained my back sometime between Wed. and Thurs.--not real sure how, but have been in quite a bit of pain the last 2 days---hopefully will feel better tomorrow. Called off work today--which I rarely do--but kind of hard to be a nurse when you can't even walk. Have not gotten any knitting done the last 2 days. Ah well. My husband actually fixed supper last nite--weiners and beans--but at least I didn't have to cook it. Happy knitting to all.

Little Joey

Well here he is. All healthy and at home. Thx everyone for all your thoughts and prayers. I finally got to hold him Wednesday for more than a coupla seconds. He is absolutely adorable and cuddly, and of course getting very spoiled.
